Join us for a classic Gran Bollito Misto from Piemonte: A mix of 7 different cuts of beef poached in a hen broth served with 7 different sauces and 7 different vegetables. The 'bollito misto' was originally invented to celebrate the auction of the Piedmontese cows in the dead of winter. Join the ladies of YAYA for a meal that celebrates the diversity of the cow in its totality. ◆ The Meat: Beef Ribs, Beef Shank, Stewing Hen, Bottom Round, Oxtail, Tongue & Trotters The Sauces: Salsa Verde, Salsa Rossa, Salsa Al Cren (Horseradish), Mostarda (Cremonese Fruit Mustard), Pearà (Pepper) & Cugna (Grape Must) The Vegetables Poached Potatoes, Steamed Spinach, Onions braised in Agrodolce, Savoy Cabbage, Fennel Braised in Butter, Funghi Trifolati & Radicchio ◆ We sell beer and wine. This is NOT a BYOB establishment. Please arrive promptly at 7pm. GABRIELLE and ALIDA both have backgrounds working in restaurants noted for their approaches to sustainability and traditional methods. They met two years ago in New York and have been cooking together ever since, focusing on working directly with local & sustainable purveyors as well as farmers to create food that is playful, nourishing and inspired by traditional methods.
