At last, a Latin-inspired culinary adventure for the foodies, chowhounds and gourmets among us! Once a month, guests will enjoy a fantastic restaurant style dinner featuring the flavors and ingredients of Central and South America and its conquistadors, Spain and Portugal. This month's dinner features a few of my (and past guest) favorite dishes.
Take time to mingle and relax before the four to five course dinner, including a welcome cocktail. Bring your favorite beer or wine, an appetite and an open mind, and I will dazzle you with the aromas and flavors of the Americas. So much more stimulating than tacos and rodizio, rich spices express their flavor through cooking techniques having roots in Africa, the Orient and Mediterranean.

Welcome Cocktail and Maris' SecreToastMy latest creation is a fancy toast... pork rilletes and grape salsa
Pasteis de Queijo (Cheese Empanada)Brazilian's take on an empanada and one of my favorite street foods! These flaky and airy pastries will be filled with Manchego and Oaxaca cheeses and a sprinkling of herbs

Pancita de Puerco y Peras Azules (Blue Pears and Crispy Pork Belly)
Pears poached in red wine and filled with bleu cheese, then wrapped in bacon, served with pan seared pork belly brined in aromatic spices
3rd
Chorizo Beef Wellington
A twist on a British classic! Beef tenderloin wrapped, chorizo, serrano ham and puff pastry. Served with cilantro pesto and seasonal veggies
Dessert
Helado de Lima-Limon con Migas de Jengibre
Lemon-lime ice cream with ginger cookie crumbles
Note: I will make every effort to serve the dishes as described in the menu, but there may be substitutions based on product availability to ensure you're served the freshest ingredients possible.
