Brik On York is a locally owned Wine Bar featuring live music, fresh food and a place for like minded people to gather! Brik On York is Denver’s newest wine bar located in the Wyman Historic District on Colfax and York. The owner, Travis Gee, eloquently bridges the gap between Old World and New World concepts by combining his travels, love of wine and personal experiences under one roof. Through his beautiful vision, Gee creates a guest experience that is as much about decadent wine and delicious food as it is about the ambiance. The objective of Brik is to provide region-specific wine and food parings, tasting events, and educational experiences as well as hosting live music and local artists. The essence of Brik is honoring the past and bringing passion to every aspect, from the location to the food to the wine. You can actually witness to the pulling of bricks as Travis put himself into the building of the restaurant with the help of his friends. Their blood, sweat and tears went into every single inch of the space and the care, design and textures in the restaurant reflect the culture the Brik family is creating. Brik features an open-kitchen with an authentic wood-fired oven imported from Italy,. The menu, which was created by Travis and expert Chef Shoshana, will feature Neapolitan Pizzas, artisan charcuterie platters, antipasti, seasonal salads and a few classic Italian dishes such as Steak Florentine. Our Denver based wine bar offers our guests the opportunity to sample wine from each of the World’s best wine regions accompanied by a regional food pairing. Our guests can learn about production techniques, history, food pairings and take a journey into the most sought after wine regions in the World. The idea that it takes one brick at a time to build this 8 year old dream. The farm-to-table concept and artisanally-inspired menu, are the talents of Executive Chef Shoshana Frost. Chef Frost brings more than a decade of culinary experience to Brik. After working with a Vera Pizza Napoletana trained Chef, Frost fell in love with the art of making pizza. “I love Neapolitan pizza because it is so specific, from making the dough to pulling the mozzarella cheese by hand; there’s an art to it,” said Frost. “It’s a food that shows passion”. Chef Frost was drawn to the concept of Brik, but it was Travis’ vision for the restaurant and corresponding passion that resonated the most with her. “It’s not just numbers or turning over tables; it is an experience”, said Frost. “We want to get to know our customers. We want it to be an experience they will remember and share”. Passionate about what they do, Travis and Shoshana have extensive knowledge of wine and food. Combined, they are paired together for success and share their love for the taste of something new. Transparent with their visions, they want their guests to have an experience. They believe in an “on the ground”, interactive, and welcoming experience with their guests. Travis’ passion and heart is an embodiment of all things he loves from cooking to serving wine, to serving guests; while maintaining authentic community as the “next door” meeting place. Our foods are made with as many Non-GMO, organic ingredients as we strive to provide healthy, whole and cultured meals that bring you to the locations from which the recipes were created. Rich with flavor, classic cooking techniques and desire to provide the truest form of the original recipes available, ask your Guest Host which beverages will pair the best with our menus, or vice versa. We want you to feel as if you were in wine country tasting the richness of the culture for the very first time; every time you visit. We believe in the community of art and invite the environment of creativity into our establishment. We host movie nights, we invite local artists, musicians, poets and creatives to share their talents with our guests as we hope to encourage and enrich the culture of this community with the artists that reside the area. We are passionate about education of pallet as well as education in the arts. We support community art programs for the youth, outreach to encourage creative freedom in our young community and continued education in the arts for those who can’t afford it. Everyone should have the opportunity to express themselves creatively through their passions and we hope to support the organizations that mutually support these causes. Brik is located on Colfax Ave and York Street in the Wyman Historic District. Originally a matinee theater built in 1905. Brik is filled with authentic, vintage novelties embodying the culture of Colfax over 100 years ago and bringing in a taste of the spirit of those days with the use of artwork, gadgets and structural décor embodying the rich history of this location. Through-out his travels Travis photographed various places around the world that inspired him and led him to the concept of Brik. The photographs of his travels as well as historical images of Colfax Ave have been applied as art in various textured mediums throughout the restaurant. “When I first walked into this place I got goose bumps and realized this is where the future location needed to be”, said Travis. “This building was a matinee, next door was an old bank, and behind that was the police station. I want to capture and honor the history. It’s a part of what Brik is, and we are excited to honor the past, from the grapes to this location”. From artists, to lovers of music, writing as an art, beginners entering the world of wine, the Wine Connoisseur, there are many moments you can take away from your Brik encounter. The use of wine dispensers allows us to serve aged, cultured wine; helping our guests learn and develop their pallet in a sensual journey of sight, smell and taste. We want to take you as far into your international pallet journey as you want to go with quality paired food and wine. We look forward to serving you and meeting the “friends we haven’t met yet”!
