Master Class: Cuba Cooks With Guillermo Pernot

Taro, fresh white fish, a rainbow of chili peppers, citrus fruits and bright herbs like cilantro are only some of the staples of Cuban cooking. Combined, these components—along with any other ingredients Cuban chefs can get their hands on—create the bold and vibrant flavors Cubans are known for. While many of Cuba’s dishes exemplify tradition, its cuisine is a melting pot of flavors—with inspiration from the native Taino population, Spain, Haiti, Africa, China and more—that allows for variety and creativity in each dish. Join Guillermo Pernot, two-time James Beard Award-winning chef and Partner of Cuba Libre Restaurant & Rum Bar, for this one-day, hands-on workshop to explore the eclectic tastes and techniques of Cuban cuisine and learn how to incorporate them into your everyday cooking. Each ticket purchase includes a copy of “Cuba Cooks.” Recipes in this class include: Frituras de Malanga con Ketchup de Tamarindo (Taro Fritters with Tamarind Ketchup) Ceviche de Pez Perro (Hogfish Ceviche) Cherna Incrustada en Malanga con Salsa de Naranja Agria y Espinaca Salteadas (Taro-Crusted Grouper with Sour Orange Sauce and Sautéed Spinach) El Arroz con Leche de Mami Totty (Mami Totty’s Rice Pudding) This class features recipes directly from Pernot’s newest cookbook, ”Cuba Cooks: Recipes and Secrets from Cuban Paladares and Their Chefs.” During Chef Pernot’s extensive travel to Cuba over the last 10 years, he’s gotten to know many native chefs who run privately owned paladares all over the country. Each recipe was created with or inspired by those chefs who continue to persevere in the Cuban culinary field because of their undeniable passion for the art and love of the cuisine.
